ABOUT MAMANI (1 Michelin Star)

Mamani, the newest restaurant from the Dallas-based hospitality group FLHO, features French cuisine with an Italian accent from Executive Chef Christophe De Lellis. The cooking is at once approachable, celebrates simplicity, clarity of flavor, and the excellence of the ingredients. The founders drew inspiration for the project from their French-born grandmother, whom they fondly call “Mamani.” Paris-born chef De Lellis brings inspiration from his food-loving grandparents as well; all four are Italian. Mamani is the flagship restaurant for the new Quad development in Uptown.

Our bar program is an extension of that commitment. It is built around precision, hospitality, and an intimate knowledge of spirits, champagne, and wine. We are looking for a bartender who does not simply execute drinks — but who understands that behind the bar at Mamani is one of the most visible and consequential positions in the room.

 

THE ROLE

As a Bartender at Mamani, you will be responsible for the full bar experience from pre-service preparation through close. You will work closely with our sommelier team and floor captains to ensure seamless continuity between bar and dining room service. You will be expected to hold the same standard of precision, poise, and guest awareness as every other member of our front-of-house team.

 

This is not a high-volume cocktail bar position. It is a fine dining role that requires discipline, restraint, and an elevated sensibility about hospitality.

 

RESPONSIBILITIES

     Execute all cocktail, spirit, and beverage service to the standards of a Michelin-starred establishment

     Maintain complete command of the full bar menu, seasonal cocktails, and spirit selection

     Engage guests with confidence, warmth, and the appropriate level of discretion

     Collaborate with the sommelier team on wine, champagne, and beverage pairings

     Manage pre-service bar setup, mise en place, and end-of-service breakdown and cleaning

     Monitor inventory, communicate needs to management, and assist with ordering

     Uphold cleanliness, organization, and consistency behind the bar at all times

     Maintain awareness of all guests at the bar — their pace, their needs, and their experience

     Support the broader front-of-house team during service as required

     Participate in ongoing training, menu tastings, and team education sessions

 

QUALIFICATIONS

     Minimum 3 years of bartending experience in a fine dining or upscale environment — required

     Demonstrated mastery of classic and contemporary cocktail technique

     Working knowledge of spirits, classic cocktails and wine

     Understanding of fine dining service standards, steps of service, and guest etiquette

     Ability to read a room and calibrate presence, pace, and conversation accordingly

     Professional presentation and composure under pressure

     Strong communication skills and a collaborative approach to teamwork

     TABC certification required (or ability to obtain prior to start date)

     Food handler's certification required (or ability to obtain prior to start date)
